100g handmade orecchiette + 200g fagioli sauce + Parmigiano Reggiano for topping
For this cold winter season, I’m bringing one of my all‑time favorite dishes from pasta school straight into Pasta Playground: Pasta e Fagioli, the rustic Italian classic that feels like a hug in a bowl.Pasta e Fagioli has deep roots across Italy, especially in the central and northern regions like Emilia‑Romagna, Veneto, and Tuscany. Every area has its own version — some soupy, some thick, some with tomatoes, some without — but the heart of the dish is always the same: simple ingredients transformed into something soulful.
Historically, it was a humble “cucina povera” dish, made by families who relied on beans, aromatics, and pantry staples to create warmth during the cold months. Over time, it became a winter ritual, a symbol of comfort and homey feeling.
This dish begins with a base that’s all about aroma: pancetta with its fat melts into the pot, releasing its aroma together with rosemary and garlic, slowly cooked together until the kitchen fills with that irresistible, savory perfume. It’s the kind of smell that makes you stop whatever you’re doing and drift toward the stove.
Then comes the heart of the dish — the fagioli, creamy cannellini beans that bring a gentle sweetness and that unmistakable rustic warmth. They give the soup its body, its soul, and that “Italian countryside kitchen” feeling that I fell in love with the very first time I made it in pasta school.
To catch all that flavor, we pair it with orecchiette, the little ear‑shaped pasta from Puglia that scoops up beans and broth perfectly. Every spoonful is cozy, earthy, and deeply satisfying — exactly what you want on a cold winter day.
Honestly, this is one of my personal favorites. I’ve loved it since the moment I learnt it, and I’m so excited to finally share it with you.
How to Cook
Bring 1L of water to a boil and add 10g of salt.
Cook the orecchiette from frozen for 3 minutes.
Warm your soup, then drop the orecchiette straight in. Cook for another 2 minutes.
Finish with topping with the parmigiano Reggiano we provided as well. Dig in!
