This is not a hundred year old pasta company,
but a humble start-up in Tokyo,
ignited from my passion for pasta.
Back in 2015, I had my first taste on handmade pasta by a Puglia lady.
I still remember the taste of the orecchiette with brocolli and anchovies.
It opened my door to handmade pasta.
FIRENZE
I started making my own pasta when I was back home.
And at some point I decided to go to a culinary school in Firenze
and studied on fresh pasta and sauces.
I obtained the fundamentals of traditional pasta recipes and pasta-making skills.
EMILIA ROMAGNA
Amazed at the variety and taste of authentic regional recipes,
Once again I returned to Italy in Emilia Romagna and continued the learning,
by staying at local's places, learning their way of making pastas;
cooking with gourmet experts and nonnas.
IN TOKYO NOW
With more than 300 pasta shapes and infinite recipes, I am on a continuous journey to eat learn something new. I hope to bring my love and passion for pasta to my customers in Japan
and enjoy good fresh gourmet food.
