ORECCHIETTE IN OCTOPUS RAGU
(100g orecchiette with 180g octopus ragu)
This has been my favourite pasta and was why I started making fresh pasta.
Orecchiette means "little ears" in Italian, and is made by scraping a knife to pull the pasta cubes into shapes like little ears one by one. Very time consuming but is totally worth the effort. Taste this wonderful chewy pasta from Puglia!
Our octopus ragu is stewed with baby octopus, together with olives, capers, it aims to flood you with the flavor of a seaside holiday!
How do I cook them at home?
All our pastas and sauces are rapid frozen right after shaped & packaged.
For the pasta, simply put into boiling salted water (10g for 1L water) in frozen condition.
For the sauce, soak the whole pack into warm water to de-freeze a bit, then
i) simply put into the pan to heat it;
ii) place the bag in another pot of boiling water to heat it up;
iii) cut a hole and microwave for 3 minutes
Once pasta is cooked according to instruction on pack, transfer the pasta to a pan with the sauce and mix. The pasta will soak in the flavor of the sauce and taste wonderful.
