CALAMARATA/ ORECCHIETTE IN OCTOPUS RAGU
(100g choice of pasta with 180g octopus ragu)
I first tasted this dish under the lemon trees of Capri, where the scent of citrus mingled with the sea breeze and the slow-simmered octopus ragù melted into thick rings of calamarata. That taste and that moment has stayed with me ever since. I am trying to recreate the dish from my memory and I still like it so much!
Calamarata, named for its resemblance to sliced calamari, is a traditional pasta from southern Italy. Its wide, tubular shape and ridged surface are perfect for catching every drop of our rich octopus ragù, made with tomato, garlic, chili, and a splash (or more) red wine.
Orecchiette means "little ears" in Italian, and is made by scraping a knife to pull the pasta cubes into shapes like little ears one by one. Very time consuming but is totally worth the effort. Taste this wonderful chewy pasta from Puglia!
The result is a dish that’s both rustic and elegant—chewy, briny, and deeply comforting. This octopus ragu has been in our November menu and has received a lot of good reviews. Please try this special umami-filled slow cooked octopus ragu, a proud work of mine.
How do I cook them at home?
All our pastas and sauces are rapid frozen right after shaped & packaged.
For the pasta, simply put into boiling salted water (10g for 1L water) in frozen condition for the time stated on pack.
For the sauce, place frozen content into a lid-covered pan and cook on medium heat for 5 minutes.
Once pasta is cooked according to instruction on pack, transfer the pasta to a pan with the sauce and mix. The pasta will soak in the flavor of the sauce and taste wonderful.
