FISH RAVIOLI WITH MISO CREAM
(ravioli 160g with 100g sauce)
Our original creation! 
Our hand rolled and cut ravioli is filled with Japanese fish fresh from Toyosu market, mixed with an edamame puree, wrapped and cut one by one with hand.
Our miso cream gives a beautiful lift to the fish ravioli, taste the flavor of an elegant dashi, white miso, cheese and butter.
 
ORECCHIETTE IN OCTOPUS RAGU
(100g orecchiette with 180g octopus ragu)
is my favourite pasta and is why I started making fresh pasta.
This means "little ears" in Italian, and is made with scraping a knife to pull the pasta cubes into shapes like little ears one by one. Very time consuming but is totally worth the effort. Taste this wonderful chewy pasta from Puglia!
Our octopus ragu is stewed with baby octopus, together with olives, capers, it aims to flood you with the flavor of a seaside holiday!
 
CHESTNUT FETTUCCINE IN MIXED MUSHROOM SAUCE
(100g fettuccine with 170g mushroom sauce)
Another original creation with the theme of "Autumn" (I know it's almost winter!)
A nutty, earthy chestnut pasta, together with the mixed mushroom from Italy including porcini, oyster mushroom, shiitake, nameko and champignon mushrooms.
Expect a deep earthy taste in this pasta set. A seasonal menu that you will love!
 
STRASCINATI WITH WHITE RAGU OF PORK
(100g strascinati with 170g white ragu sauce)
Strascinati is a type of eggless pasta from Puglia, hand shaped into concave, also pea-pod like shape to capture sauces. Its chewy texture is something great to go with ragu. 
Our white ragu with pulled pork shoulder is the hearty yet elegant ragu to go for. Using Yonezawa pork, this precious type of Japanese pork flavor was stewed for 4 hours to really melt down in the mouth. This beautiful ragu is something you will come back for.
 
How do I cook them at home?
All our pastas and sauces are rapid frozen right after shaped & packaged.
 
For the pasta, simply put into boiling salted water (10g for 1L water) in frozen condition. 
 
For the sauce, soak the whole pack into warm water to de-freeze a bit, then
i) simply put into the pan to heat it;
ii) place the bag in another pot of boiling water to heat it up;
iii) cut a hole and microwave for 3 minutes
 
Once pasta is cooked according to instruction on pack, transfer the pasta to a pan with the sauce and mix. The pasta will soak in the flavor of the sauce and taste wonderful.
